Papaya Salad
Serves 4
- 100g white cabbage chunk
- 1 carrot
- 500g papaya green whole
- 50g diakon
- small bunch corriander
- small bunch thai basil
- 1 chili de seeded
- 1 white onion
- small bunch spring onion
- 2tbs peanuts salted and roasted
- 3-4tbs nước chấm dressing (see dips and sides)
- 1 lime wedge
- scoop cricket flour
- pinch dried shrimps (optional)
Wash, peel and deseed all veg then set aside. Use a mandolin to carefully chop the daikon, carrot and papaya into julienne strips. Add them to a mixing bowl.
Slice the onion finely and cut 2 inch battons for the spring onions. Finely chop the cabbage and add to the bowl, tear the herbs into the mix and sprinkle in the cricket flour. Add dressing and toss well. Finish with crushed peanuts, chilli, lime wedge and dried shrimps.
