Kimchi stuffed avocado & poached egg

Kimchi stuffed avocado, cricket and sesame, chia, fresh chilli and herbs with a twist of lime and a poached egg. Low carb hight in protein, fibre, omega 3 and 6, calcium, vitamins, Amino Acids and tastes awesome!

Method:

Bring water to boil and add vinegar. Poach egg. Meanwhile cut the avocado removing the seed. Slice a bit off of the bottom so it stands on the plate. Add kimchi and cricket powder. Remove egg after 2 minutes when soft. To serve, place egg on top, add herbs and lime wedge. Season with salt and pepper, chia and sesame seeds.

  • 1 egg
  • 20ml white wine vinegar
  • 300ml water
  • 1/2 avocado
  • 1 lime wedge
  • 20g kimchi
  • small bunch coriander
  • small bunch chives
  • pinch chia seeds
  • pinch black sesame
  • 1/2 tsp cricket hop flour
  • pinch salt and pepper
  • small bunch watercress
