Pea, kale, courgette and bacon Soup
Serves 4-6
- 1 onion
- 1 courgette
- 3 garlic cloves
- 200g smoked bacon
- 2tbs chicken stock powder
- 2 scoop cricket powder
- 80g kale
- 400g peas
- 1l water
- small bunch spring onion
- 1 leek
- pinch salt and pepper
- 2tbs olive oil
Dice up all of the bacon, fry off half in pan until nice and crispy
Take out pan and place on a paper towel. keep the bacon fat to cook off veg.
Wash the courgette and leek. Peel and dice all veg then sweat down on low heat, add remaining bacon, then add the peas, kale and stock powder. Add the water and simmer for 10 mins. Transfer to blender and blitz until smooth. Add cricket flour and season to taste. To serve add crispy bacon, cricket flour and olive oil.
