Cricket Flour Pancakes

Pancakes : 

Melt butter in a pan, add milk, vanilla and eggs and blend. Add the rest of the dry ingredients and let stand to raise. Lightly grease a non stick pan on low heat and add a scoop of the mix and allow it to turn golden and turn. Should be cooked in 4-5 mins. 

Compote :

Add all ingredients to pan and simmer. Take off and allow to cool. Add to finished pancakes, then add honey and icing sugar if you like

Ingredients:

  • 300g self raising flour
  • 160g caster sugar
  • pinch baking powder
  • pinch salt
  • 160g melted butter
  • 280ml milk or nut milk
  • 3 free range eggs
  • splash vanilla essence
  • 1 scoop cricket flour
  • 50g fresh fruit
  • 40ml maple syrup optional
  • dust icing sugar
  • sprigs fresh mint

Compote

  • Chosen berries 2 cups
  • Caster sugar 1/2 cup
  • water 1/2 cup
