Cricket Banana Bread
Beat the stevia (or sugar) and butter until fluffy, add beaten egg. Then add the cinnamon and ginger. Smash up the banana’s and bind through the mix, adding flour, cricket flour, baking powder and yogurt. Mix all ingredients together including the nuts and chocolate.
Lightly spray a baking tin or silicone bread tin with oil before adding mixture.
Bake at 180°C for 50 mins. Check with skewer to make sure the loaf is cooked through in the middle before placing on a cooling wrack to cool for 40 mins. Enjoy!
Ingredients:
- 100g soft butter
- 50g stevia or 140g caster sugar
- 1 egg beaten
- 225g plain flour
- 50g cricket flour
- 2 tsp baking powder
- 4 ripe bananas
- 85g chopped walnuts
- 75g plain yogurt
- Half tsp cinnamon
- 75g dark chocolate pascals
- Half tsp ground ginger
